What does one do when it rains all day and you are looking forward to moving to the sunny Middle East? You do what we did and spend the entire day inside listening to Middle Eastern music, cooking up sweet potato falafels. They are truly one of the most time consuming foods we make in our household, but they are so worth it. I even taped up my breaking blender so that it could stand the pressure of turning the chickpeas into flour!
And the end result after all the involved steps (that actually do not require you to be in the kitchen most of the time) we produced this delicious, gluten free, vegan goodness covered in tahini sauce.
